Baby shower Heffalump cake and cake pops

Phew! I’m glad I got through today alive :P Spent a long long time in the kitchen… can’t move now. Attending M’s baby shower tomorrow [shall upload blog tomorrow so that it remains a surprise although I don't think she reads my blog but just in case!] and decided that my ‘bring a plate’ would be a cake.

I saw a picture of a girly elephant fondant cake topper on internet about three weeks ago and dreamt up a little project. Okay, ‘little’ turned out quite challenging as I still need lots and lots of practice with even the basic cake covering. On a side note, I struggled with Satinice and ended up having to purchase a packet of Bakel’s pettinice which we use in Magical Cake’s classes. Although I’ve read tons of rave reviews of Satinice and I’ve got no fewer than 6 different colored buckets in my pantry…I find Bakel’s heaps easier to use! Satinice is more economical though as you can stretch it thinner, however being a newbie I find it a struggle to work with a thin layer.  Let’s just say there were some tears in the kitchen today -_-”

Anyway, finally got it done! Not the finish I would have liked but really I’ve done all humanly possible with my basic skills and my body has given up! I hope nothing deteriorates overnight!

Lemon madeira inside the 7″ and chocolate with chocolate frosting inside the cake pops. Thankfully cake pops went without a hitch today despite disastrous results in my one previous attempt :)

Vintage Cupcakes Workshop

Absolutely shattered this weekend! Got home at 4:30 after work to find J curled up in bed and promptly took him to the doctors. Friday night spent at Ponsonby White Cross and Auckland Hospital Emergency Department coz J had suspected stomach ulcer. He may have overdosed NSAIDs for his painful big toe! First time gout. His pain was so severe he even got transferred by ambulance @-@ Luckily, all tests came back good and he requested not to stay overnight. In between all the nursing and house chores today, I managed to sneak off for my cupcake workshop and am glad as I picked up lots of tips and tricks. Dropped them off at mum’s en route home as her ‘Mother’s Day present’. I’m not sure if I’ll be able to drag myself out of bed tomorrow :P Here are the photos to share. Over and out!

Chocolate cloud cake & Raspberry Macarons [French]

Saturday came round and I was undecided if I wanted to do any baking this weekend but the batch of brownies from Monday night had been depleted. While doing my usual browsing of FB in bed, I came across Hamish’s chocolate cloud cake recipe through the NZ’s Hottest Home Baker FB page! So after a leisurely lunch, walk on the beach with J, we headed to the supermarket to pick up groceries as some of the family were coming round for dinner. By the time everything was unpacked it was 3:30pm. I thought great, I need the oven for dinner roast so I’ll set myself a 2 hour time limit like they did on NZHHB first episode :) They took roughly an hour each to complete.

Just so happened to have 20cm springform tins. Also was very intrigued what the texture would be like as the NZHHB show was the first time I’ve seen or heard of a ‘cloud cake’! I was worried how high it was outta the oven but the centre soon collapsed like Hamish’s. Cavity for cream! Used the french method for macarons as I was missing the less sugary, less crunchy texture. Excuse the rough finish as I didn’t bother to sieve the almond…

For those of you who want to give it a go! Recipe for Hamish’s Chocolate Cloud Cake and some Raspberry Macarons. I’m not a fan of buttercream in macarons so I used raspberry mascarpone. Simply make a puree out of fresh/frozen raspberries by sieving out the seeds and mix with mascarpone.
